Shafer Vineyards have come a long way in the 50+ years since John Shafer first purchased the site. He began by planting a variety of grapes that would soon produce some of the world’s most sought-after wines. Named for the red shouldered hawks that play a key role in Shafer’s sustainable farming practices, the Shafer, Red Shoulder Ranch, Chardonnay, Carneros, California ($35 per 6oz / $140 per bottle) is brimming with notes of melon and honeysuckle, followed by a refreshing wave of acidity. It pairs beautifully with our Dover Sole with Brown Butter Sauce.

A key factor in Shafer Vineyards’ success is their long-standing winemaker, Elias Fernandez. His namesake wine, Shafer, Relentless, Napa Valley, California ($40 per 6oz / $160 per bottle) is a testament to the pursuit of excellence. Once named Wine Spectator’s Wine of the Year, this bold red composed primarily of Syrah with a touch of Petite Sirah – offers notes of ripe red and black fruit, with hints of black tea and spices. Enjoy is alongside our Double-Cut Colorado Lamb Chops.
